It's nice to have a burst of colour at the beginning of a scene (*) to help set the tone and have a firmer understanding of the characters' looks, but honestly, I think greyscale is perfectly fine — it's been working well for manga for a very long time! And if it also aids your process, then it's a no-brainer 😊👌
* Edit to say that I'm talking about the burst of colour in the art, NOT one created by banging someone's head against a wall, lmao!!! 😅😅
